The History of Recipes
Transcribed cooking instructions as a concept can be tracked far back into distant history, in truth as far back into history as the early Egyptians, and potentially, even further back. Interesting though that maybe, generally, these early cook books were just very simple hieroglyphic or cunieform recipes for preparing meals.
Later on, in The time of the romans 25BC a roman called Apicius created some scripts which described recipes enjoyed by wealthy roman citizens. In his publication, Apicius recounts how the meals were split into appetizers, entrees and desserts, something we still use today. Additionally, he informs us how the cooks of his times used many different herbs, including a few that will be familiar to modern chefs such as bay, rue and asafoetida. Over the succeeding few centuries, the powerful and rich tried to serve the best banquets, and consequentially the best chefs and their recipes increased in prestige. Even so, it was during the 1800s that fine cooking and recipe books really came of age. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted their lives to collating, verifying, and publishing the recipes that were being prepared for the better households. When we get to the 20th century, cookbooks are increasing in popularity due to better eduction, people having increased leisure time and a general increase in wealth. |
