The History of Recipes
Historians have traced the existence of recipes back into the far past, certainly as far back into recorded history as pharonic Egypt, and potentially, even further back. Interesting though that maybe, these, early cookbooks were just very simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
Progressing into The time of the romans 25BC a man called Apicius created a number of documents detailing recipes enjoyed by wealthy Romans. In his scrolls, Apicius tells us how the roman meals were split into hors d`oeuvre, main meal and afters, a style of dining still practiced today. Aspicius also recounts how the ancient Romans made use of many different spices, including many that are still in use today such as basil, mint and asafoetida. Over the following few centuries, the rich families of Wesstern Europe competed to serve the most extravagent banquests, and as a consequence, the best chefs and their recipe collections were much in demand. Even so, it wasn`t until the 19th century the formal cooking and recipe collections rose to prominence. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated years of their lives to collating, testing, and recording popular recipes of the day. By the arrival of the twentieth century, cooking publications were highly popular as a result of more people being able to read, people having increased spare time and having more disposable income. |
