The History of Recipes
Academics have proved the existence of recipes way back into the far past, certainly as far into history as pharonic Egypt, and potentially, even further back. However, generally, these early recipes were just basic pictorial, hieroglyphic or cunieform instructions for preparing meals.
Fascinatingly, the oldest recipe found, according to Professor Solomon Katz, are some ancient tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful. As we move into The time of the roman empire 25BC a man called Apicius created some scripts describing recipes cooked by his fellow Romans. In his publication, he recounts how the meals of wealthy Romans were split into hors d`oeuvre, main course and afters, a style of dining still practiced today. This early Roman chef describes how the Romans made use of many different aromatic flavours, including some familiar names like thyme, mint and parsley. In the 15th century, knights returning from the crusades brought back many foods and spices from the Middle-East, including spices like coriander, parsley, basil and rosemary. These new foods and spices prompted a torrent in manuscripts on cooking, many of which are kept safe in private collections. Over the next few centuries, the upper-class families of Europe competed with each other to lay on the most extravagent banquests, and as a result the best chefs and their collection of recipes were highly sought after. Nevertheless, it wasn`t until the nineteenth century that cooking and recipe collections reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated years of their lives to collating, trying out, and writing down recipes to allow everyone to enjoy them. By the arrival of the twentieth century, cooking books are in high demand, as a result of increased literacy, people having increased leisure time and being a little richer. |
