The History of Recipes
We are able to read the history of `recipes` way back into history, at least as far back into history as pharonic Egypt, and quite possibly further than that. Interesting though that is, in the main part, these old cookbooks were just very simple hieroglyphic recipes for meal preparation.
The truth of the matter is, the oldest recipe discovered, according to academics are a few stone tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `wonderful`. As we move into The time of the romans around 25BC a roman called Apicius compiled a few documents describing recipes prepared by wealthy roman citizens. In his works, he describes how the meals were separated into appetizers, main meal and afters, a style of dining still practiced today. He also tells us how the Roman cooks made use of a wide range of aromatic flavors, including some that we all recognise like bay, fennel and dill. During the next few centuries, the rich and powerful families of Europe competed with each other to offer the most extravagent banquests, and consequentially the best chefs and their recipes were much in demand. However, it was during the 19th century that cooking and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to assembling, trying out, and writing down recipes that were common in the better off homes of the day. By the advent of the 20th century, cookery publications are in great demand, as a result of better eduction, people having increased spare time and having more disposable income. |
