The History of Recipes
We can trace the history of meal recipes way back into distant history, at least as far back into recorded history as the Egyptians, and potentially, even further back. However, in the main part, these early recipes were just simple pictorial, hieroglyphic or cunieform instructions for preparing food.
In fact, the oldest recipe in existence, according to historians is a collection of stone tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful and blissful. Later on, there were a couple of interesting books from the fourteenth century ; one book entitled `Forme of Cury`, and another, similary called `Curye on Inglish`. Surprisingly, these are not about the indian food that is served today, but instead accounts of the types of food enjoyed by the nobility of the period. Later on in the 1400s, knights returning from the crusades brought back many foods, spices and herbs from Arab countries, including spices like basil and coriander. These new herbs and spices prompted an increase in recipe manuscripts, some of which are now in private cookery archives. For the next few years, the upper-class families of Wesstern Europe competed with each other to offer the best banquets, and as a consequence, the best chefs and their recipe collections were much in demand. Nevertheless, it wasn`t until the nineteenth century that haute cuisine and recipe publications rose to prominence. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to collating, testing, and writing down the recipes that were being prepared for the better households. The introduction of the TV brings us TV cookery programs and the spin-off recipe books. Which brings us neatly to the present day and the invention of the internet, permitting everyone to access massive numbers of recipes like the ones you can find on this site. |
