Ingredients
2 1/2 cup potatoes -- diced
2 cup chicken broth
1/2 cup onions -- chopped
1/4 tsp sage
1/4 tsp paprika
1/8 tsp white pepper
1/2 cup carrots -- sliced
1/2 cup green beans, canned --
1 drained
1/2 cup celery -- sliced
3 cup skim milk
6 oz tuna in water -- drained and
1 flaked
Directions
In a large saucepan, combine 1 cup potatoes, chicken broth, and
onions. Bring to a boil. Reduce heat and cover. Simmer for 10 minutes
or until potatoes are tender. Add sage, paprika, and white pepper.
Mash potatoes. Add remaining potatoes, carrots, green beans, celery,
and milk to mashed potatoes. Bring just to a boil. Reduce heat and
simmer for 15 minutes or until vegetables are tender. Add tuna.
Simmer 5 minutes more.

The History of Recipes
Written cooking instructions as a concept can be traced back into distant history, at least as far as the early Egyptians, and quite possibly further than that. Interesting though that is, in the main part, these ancient cook books were just very basic pictorial recipes for food preparation.
As our culinary historical trip moves to more modern times we have two interesting books dating from the fourteenth century - a book called `Forme of Cury`, and another, similary named `Curye on Inglish`. The titles are somewhat misleading tho`, these two books are not about the spicy food that we all know today, but instead accounts of the types of food eaten by the rich people of those days. In the 15th century, knights returning from the crusades brought us many foods, spices and herbs from Arab cooking, including coriander, basil and rosemary. These new foods and tastes created an increase in manuscripts on cookery, the majority of which are now in private libraries. The arrival of TV brought us cooking programs and the accompanying recipe books. Which pretty much brings us to the present day and the internet revolution, permitting us all to access thousands of recipes like the ones you can find on our web site. |
