4 c Potatoes, Peeled, Thinly
: Sliced
1 c Cottage Cheese, 1% Lowfat
1/4 c Egg Substitute
: ds Pepper,Red,Ground
: PamŽ Cooking Spray,1 Second
: Spray
1/2 c Cheddar Cheese, Low-Fat
1/4 c Green Onions, Sliced
1/4 c Parsley,Fresh,Chopped
Cook potatoes in boiling water to cover 8 to 10 minutes or just until
tender. Drain. Place cottage cheese, egg substitute, and red pepper in
container of an electric blender or food processor; process 1 minutes
or until smooth. Set aside. Place half of potatoes in an 8-inch
square baking dish coated with cooking spray. Layer with half each of
cheese, green onions, parsley, and cottage cheese mixture. Repeat
layers with remaining ingredients, reserving parsley. Bake,
uncovered, at 375 degrees for 25 to 30 minutes or until lightly
browned. Sprinkle remaining parsley over top.

The History of Recipes
Recipes as an idea can be observed way back into distant history, at least as far into history as the early Egyptians, and quite possibly further than that. Interesting though that maybe, sadly, these early cook books were just simple hieroglyphic or cunieform instructions for preparing meals.
In an interesting twist, the oldest recipe in existence, according to experts in ancient history are some tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated and blissful. As we move into The time of the roman empire around 25BC a roman called Apicius assembled a few documents detailing recipes cooked by wealthy roman citizens. In his works, Apicius recounts how the roman meals were separated into starters, entrees and afters, a style of dining still practiced today. Aspicius also describes how the Roman cooks were skilled in the use of a good variety of aromatic flavors, including a few that will be familiar to modern chefs such as bay, mint and parsley. In the 15th century, knights returning from the crusades brought back many spices and herbs from Arab countries, including spices like parsley, basil and rosemary. These new spices and herbs was responsible for a surge in cookery books, many of which are now in private collections. The arrival of TV brings us TV cookery programs and the accompanying recipe books. Which brings us neatly to the present day and the invention of computers and the internet, permitting us all to access massive numbers of recipes such as those found on sites such as this. |
