4 c Potatoes, Peeled, Thinly
: Sliced
1 c Cottage Cheese, 1% Lowfat
1/4 c Egg Substitute
: ds Pepper,Red,Ground
: PamŽ Cooking Spray,1 Second
: Spray
1/2 c Cheddar Cheese, Low-Fat
1/4 c Green Onions, Sliced
1/4 c Parsley,Fresh,Chopped
Cook potatoes in boiling water to cover 8 to 10 minutes or just until
tender. Drain. Place cottage cheese, egg substitute, and red pepper in
container of an electric blender or food processor; process 1 minutes
or until smooth. Set aside. Place half of potatoes in an 8-inch
square baking dish coated with cooking spray. Layer with half each of
cheese, green onions, parsley, and cottage cheese mixture. Repeat
layers with remaining ingredients, reserving parsley. Bake,
uncovered, at 375 degrees for 25 to 30 minutes or until lightly
browned. Sprinkle remaining parsley over top.

The History of Recipes
We are able to trace the history of meal recipes far back into distant history, certainly as far back into history as the Egyptians, and possibly even further than that. Interesting though that maybe, these, ancient cookbooks were just primitive pictorial, hieroglyphic or cunieform recipes for meal preparation.
The truth of the matter is, the oldest recipe in existence, according to Professor Solomon Katz, is a series of stone tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `blissful`. As we move on, we find a couple of recipe books from the 14th Century : a recipe book called `Forme of Cury`, and another named `Curye on Inglish`. Although the titles sound familiar, these books are not about the curry that is served today, but instead descriptions of the types of meals eaten by the upper classes of the period. During the next few centuries, the powerful and rich competed to serve up the best banquets, and as a consequence, cooks and their collection of recipes were highly sought after. Even so, it wasn`t until the nineteenth century that formal cookery and cookery books reached a high level of popularity. Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, devoted much of their lives to assembling, verifying, and recording recipes that were common in the better off homes of the day. By the advent of the 20th century, cookbooks are highly popular due to more people being able to read, people having more free time and being a little richer. The revolution that is television gave us TV cooks and the spin-off recipe books. Which brings us neatly up to date and the invention of computers and the internet, allowing everybody to access massive numbers of recipes just like those on this web site. |
