Ingredients
5 large baking potatoes, peeled and
1 thinly sliced
4 large red potatoes, unpeeled and
1 thinly sliced
1 tsp minced garlic
1 tbsp fresh thyme leaves, chopped,
1 or 1 tsp. dried
1 tsp salt
1/4 tsp pepper
8 oz gruyere cheese, shredded
1 can chicken broth (13 3/4oz)
2 tbsp butter cut into small pieces
Directions
Heat oven to 425 degrees. Grease a 3 quart gratin or other shallow
baking dish. Spread half the potato slices in dish,. Sprinkle with
the garlic and half the thyme, salt, pepper and cheese. Top with
remaining potato slices, overlapping, for an attractive top. Pour
broth over potatoes. Sprinkle with remaining thyme, salt, pepper and
cheese. Dot with butter. Bake 30 minutes. Tilt pan to spoon up broth
to baste potatoes. Bake 30 minutes longer or until top is browned and
potatoes anr tender. Let stand 10 minutes before serving.

The History of Recipes
It is quite feasible to prove the history of recipes back into the far past, in fact as far as the Egyptians, and potentially, even further back. Having said that, generally, these early cookbooks were just very simple pictorial instructions for meal preparation.
As we move into The time of the roman empire around 25BC a man called Apicius assembled some documents showing how to cook the recipes enjoyed by the Romans. In his scrolls, he recounts how the meals were divided into hors d`oeuvres, main meal and dessert, something we still use today. Aspicius tells us how the ancient cooks used many spices and herbs, including many that are still in use today such as bay, fennel and dill. In the 15th century, the Crusaders brought back a variety of foods, spices and herbs from the holy land, including spices such as parsley, basil and rosemary. These new foods and tastes caused an eruption in recipe publications, most of which are kept safe in private libraries. When we get to the 1900s, recipe publications were greatly in demand due to better eduction, increased leisure time and a general increase in wealth. |
