Ingredients
2 cup cubed, fully cooked ham
8 medium potatoes, peeled & thinly sliced (6, -cups)
1/4 cup finely chopped onion
1/2 cup all-purpose flour
2 cup milk
3 tbsp fine dry bread crumbs
1 tbsp butter or margarine, melted
2 tbsp finely snipped parsley
Directions
Place half the ham in a 2-qt casserole. Cover with half the potatoes
and half the onion. Sift half the flour over; season with salt and
pepper. Repeat layering ham, potatoes and onion. Season with
additional salt and pepper. Sift remaining flour atop. Pour milk over
all.
Bake covered at 350 till potatoes are nearly tender, 1 to 1 1/4 hours.
Uncover. Combine bread crumbs and melted butter; sprinkle atop
casserole. Top with parsley. Bake 15 minutes longer.

As we move into The time of the romans around 25BC a roman called Apicius compiled a few documents describing recipes cooked by wealthy roman citizens. In his works, Apicius recounts how the meals were separated into hors d`oeuvre, entrees and dessert, something that is very familiar to us today. Aspicius recounts how the Romans used a wide range of herbs, including some that we all recognise such as bay, mint and parsley. During the following few hundred years, the rich and powerful families of Europe competed with each other to lay on the most extravagent banquests, and as a consequence, cooks and their recipe collections could command a high salary. Even so, it wasn`t until the 1800s that haute cuisine and recipe publications really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated their lives to assembling, verifying, and writing down popular recipes of the day. The revolution that is television brings us cooking programs and the demand for the spin-off recipe books. And that brings us to the present day and the internet revolution, permitting everybody to search through thousands of recipes just like those on the site you are now reading. |
