Potato-Ham Scallop Recipe


Ingredients

2 cup cubed, fully cooked ham
8 medium potatoes, peeled & thinly sliced (6, -cups)
1/4 cup finely chopped onion
1/2 cup all-purpose flour
2 cup milk
3 tbsp fine dry bread crumbs
1 tbsp butter or margarine, melted
2 tbsp finely snipped parsley


Directions

Place half the ham in a 2-qt casserole. Cover with half the potatoes
and half the onion. Sift half the flour over; season with salt and
pepper. Repeat layering ham, potatoes and onion. Season with
additional salt and pepper. Sift remaining flour atop. Pour milk over
all. Bake covered at 350 till potatoes are nearly tender, 1 to 1 1/4
hours. Uncover. Combine bread crumbs and melted butter; sprinkle atop
casserole. Top with parsley. Bake 15 minutes longer.

Later, in the 15th century, people returning from the crusades brought us a variety of spices and herbs from the East, such as rosemary and coriander. These new foods and tastes was responsible for an increase in recipe manuscripts, the majority of which still exist in academic collections.

During the following few centuries, the rich and powerful families of Wesstern Europe strove to offer the most exotic meals, and as a result cooks and their recipe collections increased in prestige. However, it was during the nineteenth century that fine cookery and cookery books really came of age. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, spent years to assembling, testing, and publishing recipes to allow everyone to enjoy them.

By the advent of the 1900s, cookery books were greatly in demand mostly due to increased literacy, people having more free time and a general increase in wealth.

Like it or not, the introduction of TV brings us TV chefs and the recipe books that accompanied them.

And that neatly brings us to the present day and the invention of computers and the internet, allowing everybody to access thousands of recipes just like those on this web site.
