Ingredients
4 large green bell peppers
1/2 cup onions, finely chopped
1/2 cup red peppers, finely chopped
2 tbsp olive oil
1 salt and pepper to taste
1 tbsp chives, dried, crumbled
2 cup potatoes, mashed
2 cup tomato sauce
Directions
Preheat oven to 350 degrees. Slice away pepper tops below stems.
Remove seeds and interior spines. Gently parboil peppers about 5
minutes. Drain upside down.
Set peppers aside.
Saute onions and redpepepr in oil until soft. Add seasonings and mix
well into mashed potatoes.
Carefully stuff peppers, set them in a deep-sidedbaking dish. Pour
tomato sauce around base of peppers.Bake at 350 degrees for about 20
minutes covered. Uncover, and bake 5 minutes longer. Serve warm.

The History of Recipes
Historians have traced the existence of recipes way back into the distant past, in truth as far back as the ancient Egyptians, and possibly even further than that. However, mostly, these early recipes were just very basic pictorial recipes for preparing food.
The truth of the matter is, the most ancient recipe in existence, according to experts are some clay tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `blissful`. Later on, in The time of the roman empire around 25BC a roman called Apicius created a few documents showing how to cook the recipes prepared by the Romans. He recounts how the meals were split into starters, main course and desserts, something we still use today. This early Roman chef describes how the Roman chefs made use of a wide range of herbs and spices, including some that we all recognise such as basil, rue and asafoetida. During the following few hundred years, the upper classes strove to lay on the most exotic meals, and as a consequence, chefs and their recipe collections became highly prized. Even so, it was during the nineteenth century that cookery and recipe books became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated years of their lives to assembling, verifying, and writing down popular recipes of the day. By the time we get to the 1900s, cookbooks were starting to become popular mostly as a result of more people being able to read, leisure time and disposable income. The arrival of television gave us celebrity TV chefs and the recipe books that accompanied them. Which brings us neatly up to date and the internet revolution, allowing us all to search through thousands of recipes just like those on our web site. |
