Ingredients
1 1/2 lb potatoes, peeled and coarsly grated
1/4 tsp freshly ground black pepper
1 red bell pepper, seeded and diced
6 crushed juniper berries
Directions
Place potatoes in a colander and rinse well under cold running water.
Do not drain, but place them in a skillet with other ingredients.
Cook gently, turning occasionally, for 1/2 hour. Add water sparingly,
as needed.

The History of Recipes
Written recipes as a concept can be tracked back into distant history, at least as far into history as the early Egyptians, and possibly even further. However, mostly, these early cook books were just basic pictorial recipes for preparing meals.
Fascinatingly, the oldest recipe discovered so far, according to food historians is a collection of stone tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful and exhilarated. Progressing into The time of the roman empire around 25BC a Roman scholar, called Apicius, assembled some scrolls detailing recipes cooked by the Romans. In his publication, Apicius tells us how the meals were separated into hors d`oeuvres, main course and afters, a very modern way of dining. This early Roman chef describes how the early Romans made use of many herbs and spices, including a few that will be familiar to modern chefs such as basil, rue and asafoetida. In the 15th century, knights returning from the crusades brought us many spices and herbs from Arab cuisine, including spices such as coriander, parsley, and rosemary. These new herbs and spices caused a torrent in manuscripts on food, the majority of which are kept safe in private cookery archives. By the arrival of the twentieth century, recipe books were in great demand, mostly due to higher levels of literacy, more spare time and having more money to spend. The introduction of television brought us TV cookery programs and the accompanying recipe books. Which brings us neatly up to date and the internet revolution, permitting everybody to search through massive numbers of recipes like the ones you can find on our web site. |
