Ingredients
4 cup diced red potatoes*
1 salt & pepper
2 tbsp flour, more if necessary
1 milk
1 chopped chives
1 cup finely chopped leeks*
1/2 cup finely chopped green onions
1/2 lb smoked sausage
1/2 cup bread crumbs
1/4 cup butter, cut into sm. pieces
Directions
*Note: Potatoes should be unpeeled. Use only white part of leeks.
Spread l/2 Potatoes, leeks and green onions in bottom of buttered
casserole or baking dish. Sprinkle with salt, pepper and l l/2 tbs.
flour. Add sausage, hen spread remaining Potatoes, leeks and green
onions on top. Season to taste with salt and pepper. Sprinkle with
remaining flour. Pour over enough milk just to cover mixture.
Sprinkle bread crumbs over top. Dot with butter. Cover and bake at
375 degrees until Potatoes are tender, about l hour. Remove cover,
and bake l5 to 20 minutes longer or until top is brown. Sprinkle with
chopped chives just before serving.

The History of Recipes
It is actually possible to track the history of recipes way back into ancient history, in fact as far back into history as the Egyptians, and quite possibly further than that. Interesting though that is, these, ancient recipes were just very simple pictorial, hieroglyphic or cunieform instructions for preparing meals.
Moving on, we have some books from the fourteenth century : one book titled `Forme of Cury`, and another entitled `Curye on Inglish`. Despite their titles, these two books are unconnected to the indian food that is served today, but rather recipes for the types of meals eaten by the nobility of the period. Later, in the 15th century, knights returning from the crusades brought us a variety of foods, spices and herbs from Arab cuisine, including spices like parsley, basil and rosemary. The introduction of these new culinary ideas led to an eruption in recipe manuscripts, the majority of which still exist in private collections. The revolution that is television brought us TV chefs and the spin-off recipe books. Which pretty much brings us to the present day and the invention of the internet, allowing everyone to access massive numbers of recipes like the ones you can find on sites such as the one you are reading now. |
