Ingredients
2 cup flour
1 cup raisin bran,slightly crushed
1 cup oatmeal
1 1/2 tsp baking soda
2 egg whites
3/4 cup frozen apple juice concentrate, tha, wed
1/2 cup low fat yogurt, any flavor
1 cup mashed bananas
1 cup raisins soaked 10 minutes in boilin, g water
Directions
Combine flour, raisin bran, oatmeal and baking soda in a large bowl.
Beat egg whites in a small bowl until stiff peaks form, set aside.
Add apple juice, yogurt, bananas, and raisins to the flour mixture
and stir to blend. Fold in egg whites and mix well. Spoon batter into
paper liners or a no-stick muffin pan. Bake at
400 degrees for 20 min.
note: The muffins are very dense and rise very little during baking.

The History of Recipes
Academics have proved the existance of recipes way back into distant history, certainly as far into history as ancient Egypt, and possibly even further. In practice though, in the main part, these early cook books were just primitive hieroglyphic or cunieform recipes for preparing food.
Later on, in The time of the roman empire 25BC a roman called Apicius assembled a number of documents showing how to cook the recipes cooked by wealthy roman citizens. In his scrolls, he tells us how the meals of wealthy Romans were divided into appetizers, entrees and afters, something we still use today. Aspicius describes how the Roman chefs made use of a wide range of herbs and spices, including some familiar names like bay, mint and dill. Later, in the fifteenth century, knights returning from the crusades brought back a variety of spices and herbs from Arab cuisine, including basil and coriander. These new foods and spices created an outbreak in manuscripts on cooking, many of which still exist in private collections. The arrival of television brings us TV chefs and the accompanying recipe books. And that pretty much brings us to the present day and the internet revolution, allowing us all to search through massive numbers of recipes just like those on our web site. |
