Ingredients
1 1/2 cup golden or light brown sugar
1 packed
1/2 cup granulated sugar
1 cup buttermilk
1/2 cup unsalted butter
3 tbsp light corn syrup
1 tsp baking soda
1 tsp vanilla extract
1/2 cup coarsely chopped pecans
Directions
Combine the sugars, buttermilk, butter, syrup, and baking soda in a
heavy saucepan. Bring to the boiling point, then reduce the heat and
simmer for 10 minutes, stirring occasionally. Remove from the heat
and stir in the vanilla and nuts. Cool completely before serving. The
sauce will thicken.

Progressing into The time of the romans around 25BC a roman called Apicius created a number of documents describing recipes enjoyed by wealthy roman citizens. In his works, Apicius tells us how the meals of wealthy Romans were split into starters, entrees and dessert, a style of dining still practiced today. This early Roman chef tells us how the early Romans were skilled in the use of many aromatic flavors, including a few that will be familiar to modern cooks for example bay, rue and dill. During the next few hundred years, the families of Europe competed with each other to serve up the best banquets, and because of this the best cooks and their collection of recipes were much in demand. Notwithstanding that, it was during the 1800s that formal cookery and recipe collections reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted much of their lives to collecting, trying out, and publishing recipes of the day. By the advent of the 1900s, cookbooks were in high demand, due to higher levels of literacy, people having more leisure time and having more money. |
