The History of Recipes
We can read the history of written recipes back into history, at least as far into history as the early Egyptians, and potentially, even further back. In practice though, in the main part, these early recipes were just very simple hieroglyphic instructions for preparing meals.
Interestingly, the oldest recipe in existence, according to historians are some clay tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful. Later on, in Roman times 25BC a man called Apicius assembled some documents describing recipes enjoyed by wealthy roman citizens. In his publication, Apicius recounts how the meals of wealthy Romans were divided into starters, main meal and afters, a style of dining still practiced today. Additionally, he describes how the ancient Romans were skilled in the use of many herbs and spices, including a few you will know such as basil, fennel and parsley. In the fifteenth century, the Crusaders brought back many foods and herbs from Arab countries, including spices such as coriander, parsley, and rosemary. These new foods and spices was responsible for an explosion in manuscripts on cooking, many of which are kept safe in private cookery archives. During the succeeding few hundred years, the powerful families of Europe competed with each other to serve up the most exotic meals, and as a consequence, chefs and their recipes were greatly in demand. Nevertheless, it was during the 19th century that formal cookery and recipe collections reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to collating, verifying, and publishing popular recipes of the day. By the arrival of the 1900s, recipe publications were in high demand, mostly as a result of more people being able to read, increased leisure time and having more money. Like it or not, the introduction of television brought us cooking programs and the recipe books that accompanied them. Which pretty much brings us up to date and the internet revolution, permitting everyone to access massive numbers of recipes like the ones you can find on our web site. |
