The History of Recipes
It is quite possible to trace the history of recipes way back into antiquity, in truth as far back as the early Egyptians, and possibly even further. Having said that, these, ancient cookbooks were just primitive hieroglyphic or cunieform recipes for food preparation.
Interestingly, the most ancient recipe in existence, according to Professor Solomon Katz, are some tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `wonderful`. During Roman times 25BC a roman called Apicius compiled a number of documents which described recipes cooked by the Romans. In his publication, Apicius tells us how the roman meals were split into hors d`oeuvres, main course and afters, something that is very familiar to us today. This early Roman chef describes how the cooks of his times were skilled in the use of many spices, including a few that are still present in modern kitchens such as thyme, fennel and parsley. During the succeeding few centuries, the rich and powerful families of Wesstern Europe tried to offer the best banquets, and as a consequence, cooks and their recipe collections were highly sought after. Notwithstanding that, it wasn`t until the nineteenth century the formal cooking and recipe publications became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted much of their lives to collecting, testing, and recording popular recipes of the day. By the arrival of the 1900s, cookery books were starting to become popular due to more people being able to read, more free time and being a little richer. |
