The History of Recipes
Written cooking instructions as an idea can be traced back into the far past, in fact as far into history as ancient Egypt, and quite possibly further than that. In practice though, in the main part, these ancient records were just very simple hieroglyphic or cunieform recipes for preparing food.
The truth of the matter is, the most ancient recipe discovered, according to historians are a few tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful. Progressing into The time of the romans around 25BC a roman called Apicius created a number of documents showing how to cook the recipes enjoyed by his fellow Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and desserts, something we still use today. Aspicius recounts how the Roman cooks made use of many different herbs and spices, including some that we all recognise such as bay, mint and dill. Later, in the 15th century, people returning from the crusades brought back a variety of spices and herbs from the holy lands, such as coriander, parsley, and rosemary. These new foods and tastes prompted an explosion in books on cookery, most of which still exist in private cookery archives. During the following few centuries, the families of Europe strove to serve up the most exotic banquets, and consequentially cooks and their recipes were greatly in demand. However, it wasn`t until the 19th century that fine cooking and recipe books really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated years of their lives to assembling, verifying, and writing down popular recipes of the day. Like it or not, the introduction of TV gave us TV chefs and the accompanying recipe books. And that brings us to the present day and the internet revolution, permitting us all to search through massive numbers of recipes like those on our site. |
