The History of Recipes
Food historians have proved the existence of recipes far back into the distant past, at least as far back as the ancient Egyptians, and maybe even further. Having said that, sadly, these ancient cook books were just very simple hieroglyphic recipes for preparing food.
Fascinatingly, the oldest recipe discovered so far, according to experts is a series of tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated and blissful. Progressing into The time of the romans 25BC a roman called Apicius created a few documents detailing recipes cooked by wealthy Romans. In his publication, he recounts how the roman meals were divided into hors d`oeuvre, main meal and desserts, something that is very familiar to us today. Aspicius recounts how the early Romans used a wide range of spices and herbs, including a few that are still present in modern kitchens like bay, fennel and dill. In the 15th century, people returning from the crusades brought us many spices and herbs from Arab cuisine, including spices such as coriander, basil and rosemary. These new spices and herbs prompted an explosion in recipe books, some of which still exist in private collections. Over the next few centuries, the upper classes competed to serve up the most exotic banquets, and because of this chefs and their recipes became highly prized. Even so, it wasn`t until the 19th century that cookery and recipe publications became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to assembling, testing, and recording recipes to allow everyone to enjoy them. The introduction of television gave us TV cookery programs and the accompanying recipe books. And that pretty much brings us to the present day and the internet revolution, permitting everybody to access thousands of recipes just like those on this site. |
