The History of Recipes
We can trace the history of `recipes` far back into history, certainly as far as early Egypt, and possibly even further. Interesting though that maybe, sadly, these old recipes were just very simple hieroglyphic or cunieform instructions for preparing meals.
As we move into The time of the roman empire around 25BC a roman called Apicius created a collection of scripts showing how to cook the recipes enjoyed by his fellow Romans. In his scrolls, Apicius describes how the roman meals were separated into hors d`oeuvres, main course and dessert, a very modern way of dining. Additionally, he describes how the Roman chefs were skilled in the use of many spices, including some that we all recognise for example thyme, fennel and parsley. Over the next few hundred years, the upper classes strove to serve up the most extravagent banquests, and as a consequence, the best chefs and their recipe collections were much in demand. Even so, it wasn`t until the nineteenth century that haute cuisine and cookery books became really popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to collating, testing, and writing down recipes common in their social group. The arrival of TV gave us TV chefs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, allowing us all to access massive numbers of recipes like the ones you can find on this recipe site. |
