The History of Recipes
Written cooking instructions as a concept can be observed way back into the far past, in fact as far back as pharonic Egypt, and quite possibly further than that. Interesting though that maybe, generally, these old recipes were just primitive hieroglyphic recipes for food preparation.
Fascinatingly, the oldest recipe found, according to experts is a series of stone tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `blissful`. During Roman times around 25BC a Roman scholar, called Apicius, assembled some scrolls detailing recipes cooked by his fellow Romans. In his publication, Apicius recounts how the meals were separated into hors d`oeuvres, entrees and dessert, a style of dining still practiced today. Additionally, he recounts how the ancient cooks used a good variety of aromatic flavors, including some that we all recognise such as bay, fennel and parsley. In the fifteenth century, knights returning from the crusades brought us many spices and herbs from the East, such as coriander, parsley, and basil. These new culinary innovations caused an outbreak in recipe publications, many of which are now in private collections. By the arrival of the 20th century, recipe books were in great demand, mostly due to increased literacy, more free time and disposable income. Like it or not, the introduction of television brought us TV cookery programs and the accompanying recipe books. Which brings us neatly to the present day and the invention of the internet, allowing everyone to access thousands of recipes such as those found on sites such as this. |
