The History of Recipes
Food historians have found proof that recipes existed way back into ancient history, certainly as far as the Egyptians, and maybe further still. In practice though, mostly, these old records were just very basic hieroglyphic recipes for preparing meals.
Interestingly, the oldest recipe found, according to Professor Solomon Katz, are a few stone tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful and blissful. Later on, in Roman times 25BC a man called Apicius created a collection of scripts detailing recipes prepared by wealthy Romans. In his scrolls, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and dessert, something we still use today. Aspicius also describes how the cooks of his times used many herbs, including some that we all recognise such as bay, rue and asafoetida. In the fifteenth century, knights returning from the crusades brought us a variety of foods, spices and herbs from the East, including coriander, basil and rosemary. The introduction of these new tastes prompted an eruption in recipe manuscripts, most of which are now in private collections. By the arrival of the 1900s, cooking publications are highly popular due to increased literacy, more leisure time and being a little richer. Like it or not, the introduction of television brought us TV cooks and the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, allowing everyone to search through thousands of recipes like the ones you can find on the site you are now reading. |
