The History of Recipes
Transcribed cooking instructions as a concept can be traced way back into the distant past, in fact as far back as early Egypt, and potentially, even further back. However, generally, these old recipes were just very simple hieroglyphic instructions for meal preparation.
In an interesting twist, the most ancient recipe discovered, according to Professor Solomon Katz, is a series of stone tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated. During the time of the Romans a man called Apicius assembled a few documents showing how to cook the recipes cooked by the Romans. In his scrolls, Apicius recounts how the roman meals were split into appetizers, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius describes how the Roman cooks were skilled in the use of many spices and herbs, including many that are still in use today such as thyme, rue and asafoetida. Later on, in the 15th century, the Crusaders brought back a variety of foods and herbs from the holy lands, including spices like basil and coriander. These new foods and spices led to a torrent in recipe publications, the majority of which still exist in private cookery archives. Over the next few hundred years, the powerful families of the West strove to offer the most extravagent meals, and consequentially the best chefs and their recipe collections were highly sought after. Nevertheless, it was during the nineteenth century that haute cuisine and cookery books really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to collating, testing, and recording the recipes that were being prepared for the better households. When we get to the 20th century, recipe books are greatly in demand mostly as a result of better eduction, people having increased spare time and being a little richer. The arrival of TV brought us TV chefs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the internet revolution, permitting everyone to access massive numbers of recipes like the ones you can find on this site. |
