The History of Recipes
We are able to track the history of meal recipes back into antiquity, in truth as far back into recorded history as the early Egyptians, and maybe even further. Interesting though that maybe, these, early cookbooks were just very basic hieroglyphic or cunieform instructions for preparing food.
The truth of the matter is, the most ancient recipe found, according to experts are some clay tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated. Later on, in The time of the roman empire around 25BC a man called Apicius compiled a collection of documents which described recipes prepared by the Romans. In his scrolls, Apicius tells us how the roman meals were split into hors d`oeuvre, main course and desserts, something we still use today. Additionally, he describes how the Roman chefs were skilled in the use of many spices, including some that we all recognise such as bay, rue and dill. Later, in the fifteenth century, the Crusaders brought back many new foods, spices and herbs from the East, including spices such as basil and coriander. The introduction of these new herbs and spices prompted a torrent in books on cooking, most of which are now in private cookery archives. By the time we get to the 1900s, recipe publications were increasing in popularity due to increased literacy, increased leisure time and disposable income. The arrival of television brought us celebrity chefs and the accompanying recipe books. Which pretty much brings us up to date and the internet revolution, allowing us all to access massive numbers of recipes like the ones you can find on this recipe site. |
