The History of Recipes
Experts have traced the existence of recipes back into the far past, in fact as far into history as the Egyptians, and possibly even further. However, mostly, these early cook books were just simple hieroglyphic or cunieform instructions for meal preparation.
In fact, the most ancient recipe in existence, according to experts in ancient history are some stone tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful. Later on, in Roman times around 25BC a roman called Apicius compiled a number of documents which described recipes prepared by wealthy roman citizens. In his works, Apicius tells us how the meals of wealthy Romans were separated into hors d`oeuvre, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he describes how the cooks of his times were skilled in the use of a wide range of herbs and spices, including some that we all recognise for example basil, fennel and dill. Later on in the 1400s, people returning from the crusades brought us many new foods and herbs from Arab cooking, such as parsley and basil. The introduction of these new foods and spices caused a torrent in publications on food, the majority of which still exist in private collections. For the next few years, the rich and powerful families of Wesstern Europe tried to lay on the most extravagent meals, and as a consequence, cooks and their recipe collections could command a high salary. Nevertheless, it wasn`t until the nineteenth century that fine cookery and cookery books really came of age. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, spent years to assembling, verifying, and writing down recipes of the day. The introduction of the TV brings us celebrity chefs and the demand for the accompanying recipe books. Which pretty much brings us up to date and the internet revolution, allowing everyone to access thousands of recipes just like those on our web site. |
