The History of Recipes
Historians have proved the existance of recipes back into antiquity, in fact as far back into recorded history as the Egypt of the Pharoahs, and potentially, even further back. However, these, ancient cookbooks were just basic pictorial, hieroglyphic or cunieform instructions for meal preparation.
In fact, the most ancient recipe discovered so far, according to Professor Solomon Katz, are some clay tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated and blissful. Later on, in The time of the roman empire 25BC a roman called Apicius wrote some documents showing how to cook the recipes prepared by the Romans. In his scrolls, he tells us how the roman meals were split into starters, main course and dessert, a very modern way of dining. He also describes how the cooks of his times used many different herbs and spices, including a few that are still present in modern kitchens for example thyme, mint and parsley. Later, we find a couple of books which date from the 14th Century : one book titled `Forme of Cury`, and another titled `Curye on Inglish`. Don`t be fooled by the titles though, they are not about the indian food that we all know today, but instead recipes for the types of meals prepared by the chefs of the rich people of those days. Later, in the fifteenth century, people returning from the crusades brought back many new spices and herbs from middle-east cuisine, including coriander, parsley, basil and rosemary. The introduction of these new foods and spices was responsible for an increase in publications on food, the majority of which are kept safe in private libraries. By the time we get to the 1900s, cook books are starting to become popular mostly due to higher levels of literacy, more leisure time and being a little richer. The arrival of television gave us celebrity TV chefs and the recipe books that accompanied them. And that neatly brings us to the present day and the invention of computers and the internet, allowing everyone to access thousands of recipes like those on our web site. |
