The History of Recipes
Transcribed cooking instructions as an idea can be tracked far back into ancient history, at least as far back as the Egyptians, and possibly even further than that. Interesting though that is, sadly, these old cookbooks were just basic hieroglyphic recipes for preparing meals.
Fascinatingly, the oldest recipe found, according to experts in ancient history is a series of tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful and exhilarated. As we move into The time of the roman empire around 25BC a roman called Apicius created a collection of documents detailing recipes cooked by wealthy roman citizens. In his works, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and desserts, something we still use today. He also recounts how the ancient cooks used many spices and herbs, including many that are still in use today for example thyme, fennel and asafoetida. Moving our culinary historical trip onwards, there were two recipe books from the 14th Century - a book called `Forme of Cury`, and another, similary called `Curye on Inglish`. The titles are somewhat misleading tho`, these books are unconnected to the indian curry that is familiar to us all today, but instead accounts of the types of meals eaten by the rich. In the 15th century, people returning from the crusades brought us many foods, spices and herbs from the Middle-East, such as coriander, parsley, and basil. These new foods and tastes caused an eruption in recipe books, most of which are kept safe in private cookery archives. When we get to the 1900s, cookery books are in great demand, due to increased literacy, people having more free time and a general increase in wealth. The arrival of TV gave us TV cookery programs and the spin-off recipe books. And that neatly brings us to the present day and the internet revolution, allowing everyone to access thousands of recipes like the ones you can find on this site. |
