The History of Recipes
It is possible to follow the history of written recipes back into the distant past, certainly as far as pharonic Egypt, and potentially, even further back. In practice though, mostly, these old records were just very simple hieroglyphic instructions for preparing meals.
In fact, the oldest recipe discovered so far, according to food historians is a series of tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated and blissful. Progressing into The time of the roman empire 25BC a man called Apicius assembled a number of scripts detailing recipes prepared by wealthy roman citizens. He describes how the meals were divided into starters, entrees and desserts, a style of dining still practiced today. Aspicius tells us how the Roman cooks made use of many spices, including a few that are still present in modern kitchens like basil, mint and parsley. For the centuries that followed, the powerful families of Wesstern Europe competed to lay on the most extravagent banquests, and because of this the best chefs and their collection of recipes were at a premium. Notwithstanding that, it was during the 1800s that fine cooking and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to collating, testing, and recording recipes that were common in the better off homes of the day. By the time we get to the 20th century, recipe publications were highly popular as a result of higher levels of literacy, people having increased leisure time and having more money to spend. The introduction of the TV brought us TV cooks and the demand for the spin-off recipe books. And that brings us to the present day and the invention of computers and the internet, permitting everyone to search through massive numbers of recipes like the ones you can find on this recipe site. |
