The History of Recipes
We are able to read the history of meal recipes back into history, in fact as far back into recorded history as pharonic Egypt, and possibly even further than that. In practice though, mostly, these ancient records were just basic hieroglyphic recipes for meal preparation.
The truth of the matter is, the most ancient recipe in existence, according to Professor Solomon Katz, are some clay tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated and blissful. As we move into The time of the romans around 25BC a man called Apicius compiled a few scripts showing how to cook the recipes prepared by the Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were split into appetizers, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he tells us how the cooks of his times used many different aromatic flavors, including some that we all recognise like basil, fennel and asafoetida. As we move on, there are a couple of books which were published in the 14th Century ; a recipe book titled `Forme of Cury`, and another called `Curye on Inglish`. The titles are a little misleading though, these two books are nothing to do with the indian curry that is served today, but rather descriptions of the types of meals on the menues of the nobility of that time. Later, in the fifteenth century, the Crusaders brought back many new foods and spices from Arab countries, such as parsley and basil. The introduction of these new tastes led to a surge in recipe books, some of which still exist in private collections. The revolution that is television brought us celebrity TV chefs and the demand for the accompanying recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing everyone to access thousands of recipes like those on sites such as this. |
