The History of Recipes
We can track the history of meal recipes back into distant history, in truth as far back into history as the Egyptians, and potentially, even further back. However, sadly, these old cookbooks were just very simple hieroglyphic or cunieform instructions for food preparation.
As we move into The time of the romans around 25BC a roman called Apicius compiled a number of documents showing how to cook the recipes prepared by wealthy roman citizens. In his works, he tells us how the roman meals were split into starters, entrees and desserts, a style of dining still practiced today. This early Roman chef recounts how the early Romans were skilled in the use of many different spices, including a few you will know such as bay, mint and parsley. During the next few centuries, the rich and powerful families of Wesstern Europe strove to lay on the most extravagent meals, and as a result chefs and their collection of recipes became highly prized. However, it was during the 1800s that cookery and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted much of their lives to assembling, testing, and publishing recipes for their fellow cooks to enjoy. By the advent of the 20th century, cookery books were starting to become popular as a result of increased literacy, leisure time and disposable income. |
