The History of Recipes
It is quite possible to follow the history of transcribed cooking instructions back into the far past, certainly as far into history as pharonic Egypt, and maybe even further. In practice though, mostly, these old records were just basic pictorial recipes for meal preparation.
In fact, the oldest recipe found, according to food historians is a series of clay tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated. Progressing into Roman times around 25BC a man called Apicius created a number of scripts describing recipes cooked by wealthy roman citizens. In his scrolls, Apicius describes how the meals of wealthy Romans were separated into starters, main course and desserts, something we still use today. Aspicius also informs us how the ancient cooks used a good variety of spices, including a few you will know such as thyme, rue and asafoetida. For the centuries that followed, the rich families of the West competed with each other to lay on the most extravagent banquests, and as a result chefs and their collection of recipes could command a high salary. Notwithstanding that, it was during the nineteenth century that fine cooking and recipe books became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to collecting, testing, and writing down the recipes that were being prepared for the better households. By the advent of the twentieth century, cooking publications were in high demand, as a result of increased literacy, leisure time and having more money to spend. |
