The History of Recipes
We are able to follow the history of meal recipes back into the far past, at least as far as pharonic Egypt, and maybe even further. However, sadly, these old records were just simple hieroglyphic recipes for preparing food.
The truth of the matter is, the oldest recipe in existence, according to historians is a collection of clay tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated. As we move on, we have two interesting books which were published in the 1300s - one book entitled `Forme of Cury`, and another named `Curye on Inglish`. Surprisingly, these books are not about the indian food that we all know today, but instead descriptions of the types of food served to the upper classes of the period. Later, in the fifteenth century, knights returning from the crusades brought us many foods and spices from Arab cooking, including spices such as coriander, basil and rosemary. These new herbs and spices caused an increase in publications on food, the majority of which are kept safe in private collections. During the following few hundred years, the rich families of Wesstern Europe competed with each other to serve the most extravagent meals, and as a consequence, chefs and their recipes were greatly in demand. Nevertheless, it wasn`t until the nineteenth century that fine cookery and cookery books became popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to assembling, testing, and writing down the recipes of their peers. By the time we get to the 1900s, cooking publications are in high demand, as a result of more people being able to read, increased leisure time and having more money. The arrival of television brings us cooking programs and the demand for the accompanying recipe books. Which pretty much brings us up to date and the internet revolution, permitting us all to search through massive numbers of recipes like those on this site. |
