The History of Recipes
It is actually possible to track the history of recipes way back into history, at least as far back into history as early Egypt, and possibly even further. However, mostly, these ancient recipes were just primitive pictorial, hieroglyphic or cunieform instructions for preparing meals.
As we move into Roman times 25BC a roman called Apicius compiled a collection of scripts describing recipes prepared by wealthy roman citizens. In his scrolls, Apicius describes how the roman meals were split into starters, entrees and desserts, a style of dining still practiced today. This early Roman chef describes how the ancient cooks used a good variety of spices, including a few you will know such as basil, fennel and asafoetida. During the following few centuries, the rich and powerful families of Europe competed with each other to offer the most exotic meals, and as a result cooks and their collection of recipes increased in prestige. Even so, it was during the 1800s that fine cooking and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated their lives to collecting, testing, and writing down recipes for their fellow cooks to enjoy. By the advent of the 1900s, cookery publications are in great demand, mostly as a result of increased literacy, more free time and a general increase in wealth. |
