Remoulade.. 1 c of your favorite mayonnaise, 1 T capers,1 T chopped
fresh tarragon,1 T chopped fresh parsley, 1 garlic clove minced, 1 t
powdered mustard.
Combine all ingredients, cover, refrigerate until needed.

The History of Recipes
Food historians have traced the existance of recipes back into the far past, in fact as far back as the Egyptians, and quite possibly further than that. Having said that, generally, these old recipes were just simple hieroglyphic or cunieform recipes for meal preparation.
During Roman times around 25BC a man called Apicius created a number of documents showing how to cook the recipes cooked by his fellow Romans. In his works, he tells us how the roman meals were separated into hors d`oeuvres, main course and afters, something that is very familiar to us today. Additionally, he describes how the Roman cooks used a good variety of aromatic flavours, including some familiar names like bay, mint and parsley. During the succeeding few hundred years, the rich families of Wesstern Europe strove to offer the best banquets, and as a consequence, the best cooks and their recipes were highly sought after. Nevertheless, it wasn`t until the nineteenth century that formal cookery and recipe publications rose to prominence. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to collecting, trying out, and writing down recipes that were common in the better off homes of the day. By the arrival of the 1900s, cooking publications are greatly in demand due to more people being able to read, more leisure time and being a little richer. |
