The History of Recipes
We can trace the history of meal recipes back into distant history, in truth as far back as the Egyptians, and potentially, even further back. Interesting though that is, sadly, these ancient cook books were just simple pictorial recipes for meal preparation.
In fact, the most ancient recipe in existence, according to academics are a few tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel blissful and exhilarated. Later on, in Roman times around 25BC a man called Apicius compiled some documents which described recipes cooked by his fellow Romans. In his scrolls, he describes how the meals were separated into hors d`oeuvres, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he recounts how the ancient cooks were skilled in the use of many spices, including a few that will be familiar to modern chefs for example bay, rue and parsley. Later on, we have two books from the fourteenth century - a cookery book published under the title `Forme of Cury`, and another, similary titled `Curye on Inglish`. The titles are somewhat misleading tho`, these books are not about the spicy food that is served today, but instead accounts of the types of food prepared by the cooks of the rich people of that time. Later on in the 1400s, knights returning from the crusades brought us many new foods, spices and herbs from Arab cooking, including spices like coriander, parsley, and rosemary. These new foods and tastes caused an increase in cookery books, the majority of which are now in private cookery archives. For the next few years, the wealthy families of Europe tried to offer the best banquets, and as a consequence, the best chefs and their recipes were much in demand. However, it wasn`t until the nineteenth century the formal cooking and cookery books rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, spent years to collecting, testing, and publishing recipes common in their social group. By the advent of the twentieth century, recipe books were starting to become popular due to more people being able to read, people having increased spare time and having more disposable income. The introduction of the TV brought us celebrity TV chefs and the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, allowing everyone to access massive numbers of recipes like the ones you can find on this web site. |
