The History of Recipes
Food historians have proved the existence of recipes back into history, in truth as far into history as early Egypt, and maybe further still. Interesting though that is, generally, these early records were just primitive hieroglyphic recipes for preparing meals.
Progressing into The time of the romans 25BC a man called Apicius compiled a few scripts which described recipes cooked by wealthy Romans. In his publication, he tells us how the roman meals were separated into starters, main meal and desserts, something we still use today. He also recounts how the ancient cooks were skilled in the use of a wide range of herbs, including many that are still in use today like bay, rue and parsley. In the 15th century, knights returning from the crusades brought us many new foods and herbs from the East, including coriander, parsley, and rosemary. The introduction of these new culinary ideas was responsible for an explosion in books on cooking, many of which are kept safe in private libraries. By the arrival of the twentieth century, recipe publications are starting to become popular mostly as a result of increased literacy, people having more leisure time and being a little richer. |
