The History of Recipes
We can track the history of `recipes` way back into the far past, in truth as far as early Egypt, and maybe even further. However, generally, these ancient cook books were just basic hieroglyphic or cunieform recipes for meal preparation.
Later on, in Roman times around 25BC a roman called Apicius assembled a collection of scripts which described recipes prepared by wealthy Romans. In his publication, he recounts how the meals of wealthy Romans were split into hors d`oeuvres, main meal and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef informs us how the ancient chefs made use of many different herbs, including a few that will be familiar to modern cooks like thyme, fennel and dill. For the next few years, the upper-class families of Wesstern Europe tried to lay on the most exotic meals, and because of this chefs and their recipes were much in demand. Nevertheless, it wasn`t until the 19th century that fine cooking and cookery books rose to prominence. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated the best years of their lives to assembling, verifying, and publishing recipes to allow everyone to enjoy them. By the advent of the twentieth century, cooking books are increasing in popularity mostly as a result of higher levels of literacy, increased leisure time and having more money. |
