Ingredients
2 1/2 lb chicken
1 tsp salt
1 dash pepper
4 tbsp olive oil
1 each onion, chopped
1/2 each garlic clove, minced
1/2 cup tomatoes, chopped
1/4 cup sherry
2 tbsp flour
Directions
Cut chicken into pieces; Sprinkle with salt, pepper and flour and
brown in oil. Set aside. Saute' onions and garlic in same pan. Add
chicken and rest of ingredients, cover and simmer until tender (30-40
minutes). White wine can be used for sherry.

The History of Recipes
Written cooking instructions as a concept can be found back into antiquity, in truth as far back as ancient Egypt, and quite possibly further than that. Having said that, mostly, these early cook books were just primitive pictorial, hieroglyphic or cunieform instructions for meal preparation.
Interestingly, the most ancient recipe found, according to Professor Solomon Katz, are some stone tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated. During Roman times 25BC a roman called Apicius created a number of documents which described recipes prepared by his fellow Romans. He recounts how the meals of wealthy Romans were separated into appetizers, main meal and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef tells us how the Roman chefs were skilled in the use of many different aromatic flavours, including a few that will be familiar to modern cooks for example thyme, rue and parsley. During the succeeding few centuries, the families of Europe tried to serve the most exotic meals, and as a result chefs and their collection of recipes were greatly in demand. However, it was during the 19th century the formal cooking and recipe publications became really popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to collating, trying out, and publishing recipes of the day. Like it or not, the introduction of television gave us celebrity chefs and the recipe books that accompanied them. And that brings us to the present day and the invention of computers and the internet, allowing us all to access massive numbers of recipes like those on sites such as the one you are reading now. |
