The History of Recipes
Food historians have tracked the existence of recipes far back into ancient history, in truth as far back into recorded history as the Egyptians, and possibly even further than that. Interesting though that maybe, mostly, these ancient cookbooks were just very basic pictorial instructions for food preparation.
Fascinatingly, the most ancient recipe found, according to academics is a series of stone tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful and blissful. As we move into The time of the roman empire 25BC a roman called Apicius created a collection of documents which described recipes prepared by his fellow Romans. He recounts how the meals were split into hors d`oeuvres, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also recounts how the Roman chefs made use of a good variety of aromatic flavors, including a few that will be familiar to modern chefs like basil, rue and parsley. Over the next few centuries, the rich and powerful families of the West tried to serve the best banquets, and as a result cooks and their recipes were much in demand. Even so, it wasn`t until the nineteenth century that cooking and recipe publications became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated the best years of their lives to collecting, trying out, and publishing recipes to help cooks of their time. By the arrival of the twentieth century, cookery books are increasing in popularity due to increased literacy, more free time and having more disposable income. The introduction of television gave us celebrity chefs and the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, allowing us all to search through massive numbers of recipes such as those found on sites such as this. |
