Ingredients
2 tbsp safflower oil
1 onion, chopped
2 qt chicken broth, (or
2 bouillon cubes and
2 qt water)
3 chicken bouillon cubes
5 cloves garlic, minced
1 tsp thyme
1/4 cup soy sauce
1 tsp mixed vegetable seasoning
5 sprigs parsley, chopped fine
2 tsp basil
3 carrots
6 oz wide egg noodles
3 cup cubed cooked chicken
2 tbsp arrowroot
2 cup yogurt, plain
7 green onions, chopped
Directions
Pour oil into soup pot; add onion and cook 5 minutes. Add broth
bouillon cubes, garlic, thyme, soy sauce, salt, parsley, basil, and
carrots. Cover and bring to a boil; reduce heat and simmer 30
minutes. Stir in noodles and cook uncovered 10 minutes; add chicken.
In separate bowl, stir arrowroot into yogurt; blend well. Add to
soup, stirring as needed. Increase heat to boiling and allow soup to
thicken a little. Garnish with chopped green onions.

The History of Recipes
It is quite possible to prove the history of written cooking instructions way back into the distant past, certainly as far back into history as ancient Egypt, and maybe even further. Interesting though that is, sadly, these early cook books were just basic hieroglyphic or cunieform instructions for preparing food.
Progressing into Roman times around 25BC a man called Apicius assembled a collection of scripts detailing recipes enjoyed by wealthy roman citizens. He recounts how the meals of wealthy Romans were separated into appetizers, entrees and afters, something we still use today. He also describes how the Roman chefs made use of a wide range of spices, including a few you will know such as thyme, fennel and parsley. Later on in the 1400s, the Crusaders brought back a variety of spices and herbs from middle-east cuisine, including spices such as coriander, basil and rosemary. These new foods and tastes led to a surge in manuscripts on food, most of which are now in private collections. By the advent of the twentieth century, recipe books are highly popular mostly due to higher levels of literacy, increased leisure time and having more money to spend. |
