Ingredients
3 lb chicken breast halves
1 without skin -- cut up
1/4 cup oil
1/4 cup onion -- minced
1 cup mushrooms -- sliced
1 can tomato soup, condensed
1/2 can water -- if needed
1 cup sour cream, imitation
1 whole bay leaf
1/2 tsp salt
1/4 tsp pepper
Directions
Lightly dust chicken with flour. Saute quickly until browned. Remove
from pan.
Saute onions & mushrooms until lightly browned.
Blend in rest of ingredients, bring to a simmer. Add chicken, and
simmer, covered, for 30 to 45 minutes or until chicken is tender.
Remove bay leaf before serving.

The History of Recipes
Food historians have traced the existence of recipes way back into history, in truth as far back into recorded history as ancient Egypt, and quite possibly further than that. Having said that, these, early records were just very simple hieroglyphic or cunieform recipes for preparing meals.
Fascinatingly, the most ancient recipe discovered, according to historians is a collection of tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful and blissful. As we move into The time of the roman empire 25BC a roman called Apicius compiled a collection of documents which described recipes enjoyed by wealthy Romans. He tells us how the roman meals were divided into hors d`oeuvre, entrees and dessert, something we still use today. Aspicius describes how the Romans made use of many spices and herbs, including a few that will be familiar to modern cooks such as basil, mint and asafoetida. Over the following few hundred years, the upper-class families of the West tried to serve the most exotic meals, and consequentially the best chefs and their collection of recipes were greatly in demand. Notwithstanding that, it wasn`t until the 1800s that fine cookery and recipe books really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated years of their lives to collating, testing, and publishing popular recipes of the day. The introduction of television brings us celebrity chefs and the recipe books that accompanied them. And that brings us to the present day and the invention of computers and the internet, permitting everybody to search through massive numbers of recipes like the ones you can find on this site. |
