Ingredients
3 tbsp olive oil
8 pats butter
1 cup seasoned bread crumbs
1 cup grated parmesan cheese
1 tbsp italian seasoning
6 chicken breasts
1 cup flour
2 eggs, beaten in med. bowl
SAUCE
1 lb fresh mushrooms, sliced
4 tbsp butter
1/3 cup marsala wine
Directions
Combine bread crumbs, seasoning and cheese on plate. Coat chicken with
flour, dip in egg, then coat with bread crumb mixture. Set on wax
paper and let stand in refrig 2-3 hours. Place pats of butter in
middle of skillet and place olive oil around the butter and fry the
chicken until golden brown.
Sauce: Saute mushrooms in butter. Add wine. Stir until hot.
I serve the sauce separately and let folks pour it on their chicken
themselves.

The History of Recipes
Written cooking instructions as a concept can be observed back into the far past, in truth as far back as the Egyptians, and possibly even further than that. In practice though, in the main part, these early records were just very simple pictorial, hieroglyphic or cunieform recipes for preparing meals.
Moving our culinary historical trip onwards, we have two books from the 14th Century ; a cookery book called `Forme of Cury`, and another, similary entitled `Curye on Inglish`. The titles are a little misleading though, they are unconnected to the spicy food that is served today, but instead accounts of the types of meals on the tables of the rich people of the period. In the 15th century, knights returning from the crusades brought us many new foods, spices and herbs from the Middle-East, such as basil and coriander. The introduction of these new tastes was responsible for an eruption in manuscripts on cookery, the majority of which are now in private cookery archives. The arrival of TV brings us celebrity TV chefs and the spin-off recipe books. And that neatly brings us to the present day and the internet revolution, permitting everybody to access thousands of recipes just like those on the site you are now reading. |
