The History of Recipes
It is quite possible to track the history of written cooking instructions way back into the far past, at least as far back as the early Egyptians, and maybe even further. In practice though, these, early recipes were just simple hieroglyphic or cunieform recipes for preparing meals.
Progressing into The time of the romans around 25BC a roman called Apicius assembled a collection of documents detailing recipes cooked by wealthy Romans. In his publication, he tells us how the meals of wealthy Romans were split into appetizers, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he informs us how the early Romans were skilled in the use of many different aromatic flavours, including a few that are still present in modern kitchens for example basil, fennel and parsley. Later, in the 15th century, knights returning from the crusades brought back many foods, spices and herbs from the holy lands, including spices such as basil and rosemary. The introduction of these new tastes led to an outbreak in books on cookery, the majority of which are kept safe in private collections. By the time we get to the twentieth century, cooking books are in great demand, due to better eduction, leisure time and a general increase in wealth. |
