Ingredients
3 cup sour cream
3/4 cup milk
1/2 cup green chilies
1 package uncle ben's brand chicken flavor ri, ce pilaf
1/2 tsp cayenne pepper
6 lb diced, cooked chicken
2 tbsp salt
60 each flour tortillas
Directions
1. Combine sour cream, milk and green chilies. Chill to blend
flavors.
2. Cook rice according to package directions adding cayenne papper.
3. Stir in chicken and salt. Heat through. Cover and keep warm
(150-160øF.) until ready to serve.
4. Place No. 12 scoop chicken-rice mixture on tortillas. Fold.
Ladle 1/2 ounce sour cream sauce over top of folded tortillas.
PORTIONS: Approximately 60 1/2-cup (No. 8 Scoop)

The History of Recipes
Academics have found proof that recipes existed way back into ancient history, at least as far back as ancient Egypt, and potentially, even further back. Interesting though that maybe, these, old cook books were just primitive pictorial instructions for preparing food.
Interestingly, the oldest recipe found, according to academics is a series of stone tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `wonderful`. Later on, in Roman times 25BC a man called Apicius compiled some scripts detailing recipes cooked by wealthy roman citizens. In his works, Apicius tells us how the roman meals were separated into hors d`oeuvres, main course and desserts, a style of dining still practiced today. This early Roman chef recounts how the early Romans used many aromatic flavours, including some that we all recognise such as bay, fennel and asafoetida. During the succeeding few centuries, the rich families of Europe competed to offer the most exotic meals, and as a result the best chefs and their recipe collections were at a premium. Even so, it wasn`t until the nineteenth century that fine cooking and recipe collections really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to collating, trying out, and writing down the recipes that were being prepared for the better households. By the arrival of the 1900s, recipe books were in great demand, mostly due to increased literacy, people having increased spare time and having more disposable income. |
