Ingredients
3 cup chicken, cooked & diced
1/2 cup pecans, toasted
1 cup celery, chopped
1/2 cup coconut
1/2 cup grapes, seedless, halved
1/4 cup sour cream
1 tsp mustard
1/2 tsp salt
1/2 cup mayonnaise
1/2 lemon, (juice from half)
Directions
Combine chicken, pecans, celery, coconut and grapes. Mix together
the sour cream, mustard, salt, mayonnaise, and lemon juice to make
dressing. Serve on lettuce or halved avacado. Surround with pineapple
or other fruit. Garnish with olives or cherries.

The History of Recipes
Transcribed cooking instructions as an idea can be tracked far back into history, at least as far back into recorded history as the ancient Egyptians, and maybe even further. However, in the main part, these ancient cook books were just simple hieroglyphic instructions for preparing meals.
As we move into The time of the roman empire around 25BC a roman called Apicius wrote a few documents describing recipes prepared by the Romans. He describes how the meals of wealthy Romans were separated into starters, entrees and dessert, something that is very familiar to us today. This early Roman chef informs us how the early Romans made use of many herbs and spices, including a few that will be familiar to modern cooks like basil, mint and asafoetida. Over the following few centuries, the powerful and wealthy competed with each other to offer the most exotic banquets, and because of this chefs and their collection of recipes could command a high salary. Nevertheless, it was during the 1800s that fine cookery and recipe publications reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated years of their lives to collecting, verifying, and publishing recipes that were common in the better off homes of the day. When we get to the 1900s, cook books were in great demand, mostly due to higher levels of literacy, leisure time and having more money to spend. |
