The History of Recipes
Experts have proved the existance of recipes far back into antiquity, certainly as far as the Egyptians, and possibly even further than that. Interesting though that maybe, in the main part, these early cook books were just very simple pictorial instructions for preparing meals.
During the time of the Roman Empire a roman called Apicius wrote some documents detailing recipes prepared by wealthy Romans. In his publication, he tells us how the roman meals were split into hors d`oeuvres, main course and desserts, a very modern way of dining. This early Roman chef informs us how the Romans used many spices, including a few that are still present in modern kitchens like thyme, fennel and dill. Over the following few hundred years, the powerful and wealthy houses competed to lay on the best banquets, and because of this cooks and their recipes could command a high salary. Even so, it wasn`t until the nineteenth century the formal cooking and recipe books became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated their lives to collecting, testing, and recording recipes to help cooks of their time. By the arrival of the 20th century, cook books are highly popular due to higher levels of literacy, more free time and having more money to spend. |
