The History of Recipes
It is possible to read the history of written recipes far back into ancient history, in truth as far back into history as the early Egyptians, and possibly even further. Interesting though that maybe, these, old cookbooks were just very simple pictorial instructions for preparing meals.
The truth of the matter is, the most ancient recipe in existence, according to Professor Solomon Katz, are some stone tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. Later on, in Roman times around 25BC a roman called Apicius wrote a few documents showing how to cook the recipes prepared by the Romans. In his works, Apicius tells us how the meals of wealthy Romans were separated into appetizers, main meal and desserts, a very modern way of dining. Additionally, he recounts how the Roman cooks used a wide range of herbs, including a few that will be familiar to modern chefs like bay, mint and dill. Later on in the 1400s, people returning from the crusades brought back many new spices and herbs from middle-east cuisine, including spices such as rosemary and coriander. The introduction of these new foods and spices created an explosion in books on cookery, the majority of which are now in private cookery archives. The introduction of the TV gave us celebrity TV chefs and the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, permitting us all to search through thousands of recipes just like those on the site you are now reading. |
