The History of Recipes
Experts have traced the existance of recipes back into the far past, in truth as far back as the early Egyptians, and possibly even further. Having said that, sadly, these early cook books were just simple hieroglyphic recipes for preparing food.
Interestingly, the most ancient recipe found, according to food historians is a collection of clay tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `wonderful`. Closer to modern times, we have two books dating from the 1300s : a cookery book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Perhaps surprisingly, these two books are unconnected to the curry that is popular today, but instead recipes for the types of food prepared by the cooks of the rich and wealthy people of that time. Later on, in the 15th century, the Crusaders brought back a variety of foods and spices from Arab cuisine, including coriander, parsley, and rosemary. These new foods and tastes led to an eruption in recipe manuscripts, the majority of which still exist in private cookery archives. Over the next few hundred years, the wealthy families of the West strove to serve the most extravagent banquests, and because of this the best cooks and their recipes were at a premium. However, it was during the 19th century that fine cookery and cookery books really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted much of their lives to assembling, testing, and publishing recipes of the day. When we get to the 20th century, cooking books were greatly in demand as a result of higher levels of literacy, people having more spare time and having more disposable income. The arrival of TV brought us TV chefs and the demand for the spin-off recipe books. And that brings us to the present day and the invention of the internet, permitting everyone to access massive numbers of recipes just like those on this site. |
