The History of Recipes
Food historians have tracked the existance of recipes way back into ancient history, at least as far back into recorded history as the Egyptians, and possibly even further than that. However, in the main part, these early recipes were just primitive pictorial, hieroglyphic or cunieform instructions for preparing meals.
Interestingly, the oldest recipe in existence, according to food historians are some clay tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful and blissful. As our culinary historical trip moves on a few more years we have a couple of interesting books from the 14th Century ; a cookery book titled `Forme of Cury`, and another named `Curye on Inglish`. Surprisingly, they are not about the indian food that we all know today, but rather descriptions of the types of food served to the rich people of that period. In the fifteenth century, knights returning from the crusades brought us many foods, spices and herbs from Arab cooking, such as parsley and basil. These new herbs and spices was responsible for an increase in recipe publications, the majority of which still exist in academic collections. During the succeeding few hundred years, the rich families of Europe competed with each other to serve up the best banquets, and as a consequence, cooks and their recipe collections were at a premium. Nevertheless, it was during the nineteenth century that haute cuisine and cookery books became really popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, devoted much of their lives to assembling, trying out, and recording recipes of the day. Like it or not, the introduction of television brought us TV cookery programs and the spin-off recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing everybody to access massive numbers of recipes like those on our site. |
