The History of Recipes
Experts have traced the existence of recipes back into history, in truth as far back as ancient Egypt, and quite possibly further than that. Interesting though that is, sadly, these early cook books were just simple pictorial, hieroglyphic or cunieform recipes for preparing food.
Fascinatingly, the most ancient recipe discovered so far, according to Professor Solomon Katz, is a series of ancient tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful and blissful. During the time of the Roman Empire a man called Apicius compiled a few documents which described recipes cooked by his fellow Romans. He recounts how the meals of wealthy Romans were separated into starters, main meal and dessert, a style of dining still practiced today. Additionally, he informs us how the chefs of Roman times were skilled in the use of a good variety of spices and herbs, including some familiar names for example bay, fennel and dill. Over the following few hundred years, the wealthy families of the West tried to offer the most exotic meals, and because of this the best cooks and their collection of recipes were highly sought after. However, it was during the 19th century that fine cookery and recipe collections reached a high level of popularity. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, spent years to collecting, testing, and writing down the recipes of their peers. The introduction of television brought us celebrity TV chefs and the recipe books that accompanied them. Which pretty much brings us up to date and the invention of the internet, allowing everyone to access massive numbers of recipes such as those found on this recipe site. |
