Chicken Sesame Recipe


Ingredients

1 each frying chicken -- cut up
1/4 cup flour
3 tbsp sesame seeds
1/2 tsp salt
1/4 tsp pepper
1/4 cup salad oil
1 small onion -- chopped
2 stalks celery -- chopped
1/2 cup dry white wine
1 each chicken bouillon cube --
1 crumbled
1/2 tsp tarragon
1/4 cup cornstarch
1/4 cup water
1 cup dairy sour cream


Directions

Coat chicken with mixture of flour, sesame seeds, salt and pepper. In
large skillet or slow-cooking pot with browning unit, brown chicken
in oil. Add onion, celery, wine, bouillon cube, and tarragon. Cover
and cook on low 6 to 8 hours. Turn control to high. Remove chicken
to warm shallow dish. Dissolve cornstarch in water and stir into pot.
Cook on high 15 minutes. Turn heat off; stir in sour cream. Pour
sauce over chicken; serve hot.

In his works, Apicius tells us how the meals of wealthy Romans were separated into starters, entrees and afters, a very modern way of dining. Additionally, he describes how the Roman chefs made use of many aromatic flavours, including some familiar names for example bay, fennel and asafoetida.

In the 15th century, people returning from the crusades brought back many new foods and herbs from the holy land, such as basil and rosemary. The introduction of these new foods and spices was responsible for a surge in manuscripts on cooking, the majority of which still exist in private libraries.

Over the following few centuries, the powerful and rich tried to lay on the most exotic meals, and consequentially cooks and their collection of recipes increased in prestige. Nevertheless, it was during the 1800s that cooking and cookery books really came of age. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated years of their lives to collating, trying out, and writing down the recipes of their peers.

When we get to the 1900s, cookbooks are increasing in popularity mostly as a result of better eduction, more free time and a general increase in wealth.

The arrival of TV gave us celebrity chefs and the recipe books that accompanied them.
