The History of Recipes
Academics have tracked the existance of recipes far back into antiquity, at least as far back into history as ancient Egypt, and maybe further still. Having said that, sadly, these ancient records were just very basic hieroglyphic or cunieform recipes for food preparation.
Interestingly, the oldest recipe discovered, according to historians are some clay tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `blissful`. During Roman times around 25BC a roman called Apicius wrote some documents describing recipes prepared by wealthy Romans. In his works, Apicius tells us how the meals were divided into hors d`oeuvres, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also describes how the chefs of Roman times were skilled in the use of a good variety of aromatic flavors, including some familiar names like bay, rue and parsley. During the succeeding few hundred years, the powerful and wealthy houses competed with each other to offer the most exotic meals, and consequentially the best cooks and their collection of recipes were greatly in demand. Even so, it wasn`t until the nineteenth century that haute cuisine and cookery books really came of age. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, spent years to collecting, trying out, and writing down recipes that were common in the better off homes of the day. Like it or not, the introduction of television gave us TV cookery programs and the recipe books that accompanied them. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to access massive numbers of recipes such as those found on sites such as this. |
