The History of Recipes
Transcribed cooking instructions as an idea can be traced way back into ancient history, in truth as far back into recorded history as early Egypt, and possibly even further. In practice though, mostly, these early records were just very basic hieroglyphic or cunieform instructions for food preparation.
In an interesting twist, the most ancient recipe discovered, according to experts are some clay tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `wonderful`. During the time of the Romans a man called Apicius compiled some documents which described recipes prepared by his fellow Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were split into appetizers, main meal and desserts, something we still use today. Aspicius recounts how the cooks of Roman times used a wide range of spices, including a few you will know for example thyme, rue and parsley. In the 15th century, knights returning from the crusades brought us many new foods and herbs from the holy lands, such as parsley and basil. The introduction of these new tastes led to an explosion in books on cooking, most of which are now in private cookery archives. The arrival of TV brought us celebrity chefs and the recipe books that accompanied them. And that brings us to the present day and the internet revolution, allowing everybody to search through thousands of recipes just like those on this web site. |
