The History of Recipes
Transcribed cooking instructions as a concept can be traced way back into history, in truth as far back into recorded history as pharonic Egypt, and possibly even further. However, sadly, these old cookbooks were just very simple pictorial recipes for food preparation.
During the time of the Romans a roman called Apicius compiled a collection of scripts which described recipes prepared by his fellow Romans. In his works, Apicius describes how the meals were divided into hors d`oeuvre, main meal and afters, something we still use today. Additionally, he recounts how the ancient cooks used a good variety of herbs and spices, including some familiar names such as thyme, mint and asafoetida. Later on, in the 15th century, knights returning from the crusades brought back many new foods and spices from middle-east cuisine, such as parsley, basil and rosemary. These new herbs and spices prompted an eruption in manuscripts on food, most of which are kept safe in private collections. When we get to the 20th century, cookery publications are increasing in popularity as a result of higher levels of literacy, more free time and having more disposable income. |
